This is my own ongoing Elden Ring PS5 FAQ, of things I searched for while first playing the game, hope others find it of use.

How to quickly mount torrent

On the equipment screen, once you have the Spectral Steed Whistle, at the bottom of screen in quickselect item slots.
You should see your Flask of Crimson Tears and Flask of Cerulean Tears in the first two slots.
Find an empty slot, open it, and equip the Spectral Steed Whistle.

After this, scroll to the Whistle by pressing down on the D-pad until it is selected.
The press square to mount, and dismount

How to Gesture

To access your gestures you will simply hover the one you want to use and the press the AButton to perform the gesture in game.

Gestures can be changed much in the same manner that you use them, raher tahn pressing X, press hold Triangle. This shows all the gestures that you’ve collected in the game, and can then allocate them

You can activate gestures with a motion control gesture!

Hold the Triangle button and then tilt your controller in the correct direction to make your character perform a gesture. You can see the associated motion controls for each gesture in the menu.

Change appearance

Seek out the dressing table at the Roundtable Hold, in the room where you have a hug

How to leave Roundtable Hold

The only way to leave Roundtable Hold is by fast-traveling to a previously-unlocked Site of Grace.

Open up the map and then hover over any of the Golden Medallion icons. These icons act as Sites of Grace and will allow players to freely teleport to any area they have already visited.

Should I give royal house scroll Sellen?
